BBQ Chicken, Roasted Ranch Potatoes

Last nights supper was BBQ Chicken leg quarters, mac n cheese, corn on the cob, roasted ranch potatoes and Sister Schubert's rolls.  Tracie, our grill master, told me to pre-bake my leg quarters.  Since they can take up to 45 mintues on the grill, pre-baking doesn't keep you tied to the grill and doesn't dry out the chicken.  We covered them in BBQ sauce and baked them for 45 minutes on 350, then swapped them over to the grill for about 10 minutes on each side.  Thanks Tracie!!

We also had roasted ranch potatoes.  This is pretty simply and very yummy.  I diced 6 russett potatoes, sliced half of a vidalia onion and put them in a casserole dish.  Then I mixed in about a cup of ranch dressing and a cup of shredded cheddar cheese, finally I added (you knew it was coming) BUTTER!!  Cover this in tin foil and bake on 350 for 45 minutes.  Now, if you are going to be running the grill for an extended period of time, you can make these potatoes in foil packets and throw them on the grill too.  You can add just about anything to them, I think my next batch will have bacon and asiago cheese.
