Christmas Blondies
Too much chocolate on the Christmas desert buffet?? Of course not, there's no such thing as to much chocolate! However, if you find yourself looking for something with a little more color these are a great alternative. I used red maraschino cherries, but if you can find the red and green candied cherries they look even better.
2/3 Cup Butter
2 Cups packed brown sugar
2 large eggs
1 TBSP cherry brandy or cherry juice
1 1/2 Tsp baking powder
2 Tsp vanilla
1/4 Tsp salt
2 1/4 All purpose flour
1 Cup chopped toasted walnuts
3/4 Cup white chocolate chips
1/2 Cup coarsely chopped cherries
Heat oven to 350 degrees F. Grease a 13x9 inch baking pan.
In large bowl beat softened butter for 30 seconds. Add sugar and beat until combined. Beat in eggs cherry juice/brandy, baking powder, vanilla and salt. Add flour and mix until blended. Stir in nuts, chocolate chips, and cherries. Spread into pan.
Bake 35 minutes or until golden brown. Cool pan completely in pan positioned on wire rack.
