Easy Peach Cobbler

This is my favorite way to make peach cobbler and I will be forever grateful to Alice Young for sharing it with me.  How can you go wrong with a recipe that starts with a stick of butter??   I used a 9x9 pan for this cobbler, but only because my cast iron skillet was otherwise occupied.  You can also make this in a glass mixing bowl, casserole dish etc.  Whatever you use, you must keep it stable from the counter to the oven.  If you are using a disposable pan put a cookie sheet under it.
Here we go.

1 stick butter
1 Cup Sugar
1 Cup Self Rising Flour
1 Cup Milk
1 Large Can Sliced Peaches (29oz)
Cinnamon to taste ( I used about 1/8 tsp)



Preheat oven to 350 degrees.  Put your stick of butter in the dish and place in the oven to melt.  While the butter is melting combine sugar, flour, cinnamon and milk.  I sifted my flour, but mainly just because the sifter looks like I put much more work into this cobbler than I actually did.  You must admit it looks impressive.


Okay, so by the time you mix all that up and open your can of peaches (DO NOT DRAIN THE PEACHES) your butter will be melted.  Take out your pan,  you should have butter all over the bottom of the dish, lucky dish. pour the peaches into the middle of the pan, hopefully they will cover the bottom of the pan.  If not, you may push a few around with a fork, this should be minimal.. don't disrupt the butter.  Next pour your batter into the center of the pan, don't stir it! It will settle itself out in the oven.  Gently place the dish in the oven and bake for 45 minutes.






Now doesn't this look yummy?? It is important that you hide the peach can, leave out the sifter and possibly throw a little flour on your clothes or face for good measure.  A good cook never gives away all her secrets.
