I remember my mother making these every year for our Christmas Eve party at our house. Best I can remember they were one of my papaw's favorite. I of course love anything with cheese or butter, these have both so how can you go wrong? Some recipes call for pressing them with a floured fork, I remember my mother doing it with cold water and that's what I've always done. Hope you enjoy them as much as I do.
2 Cups grated sharp Cheddar cheese
1 Cup butter
2 Cups flour
Dash of salt
Dash of red pepper
2 Cups crispy rice cereal
Cream cheese and butter together. Add flour, salt, pepper and cereal. Form small balls and place on an ungreased cookie sheet. Press into wafers with fork dipped in ice water. Bake at 350 degrees for 10 to 15 minutes or until golden brown.
